Ingredients
- 250 g butternut biscuits
- 125 g butter, melted
- 375 g cream cheese, softened
- Zest of 1 lemon
- 2 teaspoons vanilla essence
- 1/3 cup lemon juice
- 1 x 400 g tin condensed milk
Method
- Process biscuits until finely crushed. Add butter and mix well.
- Press half of the biscuit mixture into the base of a greased and lined 20 cm springform tin.
- Use a glass or spoon to push the remainder of the mixture around the sides of the tin.
- Refrigerate for 15 minutes.
- Beat the cream cheese until smooth and creamy.
- Add lemon zest and vanilla and beat well.
- Gradually add the condensed milk, and continue to beat until smooth.
- Gradually add the lemon juice, and continue to beat until just smooth. (apparently the sour lemon juice sets it)
- Pour into the prepared tin and refrigerate overnight.
