Ingredients
- Potatoes
- Sweet Potatoes
- Dried mixed herbs
- Shredded parmesan cheese
- Olive oil
- Salt
Method
- Preheat oven to 180 celcius
- Peal and chop potatoes and sweet potatoes into 2cm cubes
- Place in a mixing bowl with olive oil and a sprinkling of salt. Toss until vegetables are well coated
- Line a shallow tray with baking paper and spead cubes out so that there is some space between them
- Bake until well browned (approx 40min)
- Remove vegetables from oven and toss with mixed herbs and parmesan
